About Citizen Rail:
Citizen Rail, a modern American restaurant and bar in the Union Station neighborhood, features contemporary riffs on regional American classics, cooked over a wood-fired grill. Our regionally ranched meats are butchered and dry-aged in house, then grilled over native fruit and hardwoods. Local produce and sustainably caught seafood round out our menu, their flavors enhanced by the curls of smoke rising from the open fire. Citizen Rail is located at 1899 16th Street, adjacent to the Hotel Born. We are open for breakfast, lunch, and dinner, offering brunch on the weekends and happy hour every day in our bar from 2:30 – 6 pm.

About Chef Christian Graves:

Collaboration lies at the heart of Chef Christian Graves’ cooking, whether it’s working with local farmers, ranchers and artisans to source the finest ingredients, or teaming with fellow chefs to support the sustainability of regional food systems. During his tenure at San Diego’s JSix, Chef Christian Graves was a leading light in the city’s food movement, co-founding the popular Cooks Confab and forging relationships with local purveyors. He continues this practice in Colorado, where his Citizen Rail menu is inspired by the state’s excellent local meats, produce, and provisions.
